Zero Point Vegetable Soup has always been a favorite of mine! It’s packed with veggies and is pretty versatile using foods you may already have in your pantry.
But now that I’m on the myWW Purple Plan I can add something I truly love – POTATOES!

Customizing for All my WW Plans
I love that we all can pick and choose which WW plan works for us. For this recipe, as written, I am using the PURPLE PLAN.
Now, if you’re on any other plan (blue or green) you can simply remove the potatoes, add more veggies or beans to keep it at zero points. Zero Point Vegetable Soup is so versatile too. You can add different flavors and different vegetables to suit your family’s needs.
Here’s how the recipe plays out for EACH plan:
- Purple Plan: 0 SmartPoints
- Blue Plan: 2 SmartPoints
- Green Plan: 5 SmartPoints

Can I Freeze Weight Watchers Slow Cooker Vegetable Soup?
Absolutely! I have multiple sized Tupperware containers and typically freeze in single portions. You can freeze for up to six months. Let the soup cool a bit before adding to the freezer.

Here are a few different ways you can edit Weight Watchers Slow Cooker Vegetable Soup!
- Add Chicken – Depending on your MyWW Plan, you can still keep your SmartPoints low or at zero!
- Substitute for your favorite veggies – Seriously, zero point vegetable soup is so versatile you can really just open your pantry or freezer and put a delicious meal together. For me, I love using Rotel for a little spice in my soup but you can simply use diced tomatoes.
- Change up the broth for different flavor – I used a chicken broth but I love using beef broth, a combo of both chicken and beef broth or a delicious vegetable broth.

Weight Watchers Vegetable Soup
Equipment
- Frying Pan
- Slow Cooker
Ingredients
- Cooking Spray
- 1 cup Frozen Corn
- 1 cup Frozen Peas & Carrots Mix
- 2 10 oz cans Rotel Tomato and Green Chiles can use diced tomatoes
- 3 medium Potatoes skinned, chopped
- 1 cup Celery chopped
- 4 cloves Garlic minced
- 2 small Onions chopped
- 2 bay leaves
- 4 cups Chicken Broth can use beef or vegetable broth
Instructions
- Spray pan with cooking spray. Cook chopped onions for 4-5 minutes until translucent. Add garlic and saute for one minute. Turn heat off.
- Add chopped potatoes, frozen corn, frozen peas and carrots, celery, diced tomatoes/Rotel, cooked onions and garlic and chicken broth to the Slow Cooker.
- Cook on low for 6-8 hours.
