My toddler son, Rion, is a picky eater with an allergy to dairy. No smothering nutritious foods in cheese or butter hoping he takes a bite. Definitely no milk to go with his meal.
In addition to finding allergy friendly meals, I am always on the hunt for the perfect allergy friendly snack for my picky eater.
Allergy moms know how hard it can be to find nutritious foods that their picky eater will eat. My son is no different. I’ve been on a mission to get him to eat his vegetables and until recently I thought it was just a fruitless effort.
Enter Garden Lites
I found Garden Lites in our local Stop & Shop in the same aisle where I buy Rion’s dairy free yogurt and almond cashew milk. Our store has an entire aisle dedicated to allergy friendly healthy foods! In the frozen section of the aisle, I checked my labels, but it’s written clearly on the front that it does not contain dairy.
I checked out the ingredients list and could pronounce every single ingredient on the label. With a picky eater plus an allergy, anything he might eat we throw in the cart to try it out at home. I don’t even bat an eye anymore.
Garden Lites are dairy, nut, and gluten free making the product the perfect allergy friendly food for moms looking to add an additional snack option to the rotation.
I picked up the Garden Lites Chocolate Muffins and the Blueberry Oat Muffins. Both are made with zucchini and carrots – two vegetables my son would turn his precious little nose up to if they were just on his plate.
You can either heat up the muffins quickly in the microwave or let the muffins defrost for 4 hours prior to eating without the need for a microwave. Perfect to take on the go or pop in your child’s lunch bag.
What Are The Muffins Made Of?
When you see big claims that things are made of vegetables, just how many vegetables go into this product? And how can they make it dairy, nut, and gluten free?
I can pronounce every single ingredient in the Chocolate and Blueberry Oat Muffins. I know exactly what I am giving my son and he has no idea how healthy it is.
The first ingredients are vegetables. Winner winner chicken dinner. Rion doesn’t eat a lot of vegetables. It’s a bit of a staring contest between him and whatever is on his plate.
It’s never a staring contest with a dairy free cookie, bread or muffin though. He’s my little carb addict. It didn’t even cross my mind to not put the muffins in the cart.
Okay, But How Does It Taste?
We really do enjoy making our food healthier. One time we tried to make chocolate mousse with avocado as per Pinterest instructions and decided that we’d be better off just making it the old fashioned way.
This is not like that at all.
Direct quote from my husband while trying one Chocolate muffin:
“Wow. There’s nothing wrong with this. It tastes like those chocolate cupcakes you used to make me. There are vegetables in this? How much? It can’t be a lot. :checks box: No way. These are too good. You better hide these or they might disappear after bedtime.”
And this is my son eating his Garden Lites Chocolate Muffin:
He’d take a little bite, shake his head smiling, as if he got away with dessert for a mid afternoon snack.
Hate to break it to ya, bud. You’re eating vegetables.
